    • How to make a smooth cheese sauce in 4 easy steps 🧀

1. Melt 2tbsp butter in a saucepan over a medium heat. 
2. When the butter has melted and begins to sizzle (or sing as the french say) add 2tbsp plain flour and mix till it forms a lump. 
3. Reduce the heat to med-low, and measure 1pint of milk into a jug. Pour a little of the milk into the butter/flour mixture (the roux) & beat with a whisk to combine. Add a little more milk & beat to combine. Continue doing this till you’ve finished the milk & the sauce is smooth. 
4. Keep the sauce on a low heat & add a pile of grated cheese(s). Whisk to combine. Taste and adjust seasoning. 🧀 This can now stay on a low heat while you make pasta, just give it a whisk every now and then to stop it getting lumpy🧀

Use with macaroni, cauliflower cheese or remove the cheese it’s a white sauce for lasagne & moussaka. .
